I am currently running a D&D game right now w/ a level 7 ranger, fighter, and rogue. How much damage should they be doing with their weapons by now and what should their AC be around?

Hey Alarion, sorry it took so long to answer your question. You have three characters; a 7th-level Ranger, a 7th-level Fighter and a 7th-level Rogue. The damage they can do and the protection they have by this point can be determined by their skills and bonuses. Their combat skills will progress normally based on level. You are basically asking how much equipment and magical items these characters should have by the time they reach 7th level. This is really variable by campaign.
Some campaigns have high magic and this is usually paired with a high frequency of magical items. By 7th-level, characters would end up with 5 or more medium to high powered magical items and perhaps just as many single use items.
Some campaigns have lower magic, with a correspondingly low frequency of magic weapons and armor. A 7th-level character might have adventured for years to scrape together one or two medium-powered items with perhaps a few single use items.
It's possible that you could be stingier in your campaign, but keep in mind that your players are looking to HAVE FUN and without a little taste of carrot from the end of that stick. Basically, magic items are a lot of fun and a more tangible reward for your characters than piles of gold. Have fun!
